Have been watching my cauliflower, wanting to pick when they were ready...but then they started turning purple, and I wondered...what is wrong with them? So off to the internet I go...and discovered what it is...besides not having the rich soil that creates big healthy heads...here is what I found:
"Some cauliflower varieties have a genetic propensity to having a higher concentration of red, purple, or blue pigments. This is the same harmless, water soluble pigment found in eggplant, red cabbage, berries, plums and grapes. In other types of cauliflower the colorless or white pigments will predominate. Purpling can develop in white varieties of cauliflower if the heads are exposed to light while developing. Usually, the leaves are tied over the heads."
And then someone tells me that they do that when they stay too long on the plant...and the taste becomes bitter the older they get.
Well of course! Any cauliflower grower knows that...right? So I am still learning.
At least they are still usable...organic.

I just learned something! My cauliflower didn't survive the cold snap, I didn't get as far as you have.
